Kyopolou is a delicious vegetable starter or relish usually prepared from roasted eggplants and garlic. It originally comes from Bulgaria, but it is also very popular in Turkey. It can be consumed as spread on bread or crackers, as a condiment to various meat meals, as a salad, or as an appetizer.
