Low moisture mozzarella has a longer shelf life than fresh mozzarella and has a saltier, deeper flavor and denser texture. Being stored refrigerated, it can be easily transported and last for months thus it becomes the ideal product for bulk supply and sales. It has a smooth consistency and a mild, creamy taste.
Color is white to light amber determined by the taste and preferences of the customers. It melts fast, has superior elasticity, and receives the perfect looking light golden-brown color and incredible taste when heated. It stretches well and does not overburn.
Mozzarella for baking comes in a block or shredded in packs, ready for consumption.
